Grilled Salmon



Oil grill lightly or place a lightly oiled heavy duty piece of aluminum foil just large enough to fit all of the salmon on the grill. Poke several holes in the foil. Place fillets skin side down, on foil. Salt & pepper lightly. Spread butter and onions on top. Cover and grill over medium heat.

Vary this recipe by marinating the salmon for ½ hour prior to grilling in Kikomans soy sauce, red wine vinegar or a light barbecue sauce. Try adding garlic, horseradish or dill to change the flavor.

Camping Variation

Wrap salmon, sauce and onions in tin foil. Wrap vegetables such as broccoli, cauliflower, carrots and potato pieces in foil with a little salt & pepper and just a touch of olive oil. Seal sides by folding tin foil. Place wrapped salmon and vegetables in coals of fire or on grill until done. Take care opening foil wraps. The steam is hot!
